The Assistant Director of Food and Beverage is responsible for assisting the Director of Food and Beverage with the overall management of the Food and Beverage functions at Santa Ana Star Casino. The emphasis of responsibilities for this position are placed on front of the house operations; i.e. banquets, Bar and Grill, bar service standards, etc. |

Major Responsibilities/Activities:
- Responsible for Food and Beverage operations in accordance with company standards and expectations with an emphasis on front of the house operations.
- Responsible for meeting guest service standards of all Food and Beverage outlets.
- Determines appropriate staffing and training needs. Reviews schedules, administers discipline and provides direct supervision of staff as necessary to promote a high level of customer service.
- Assists with the review of departmental financial reports, establishment and maintenance of fiscal budgets/business plans, and initiation of departmental cost controls.
- Assists with the establishment and maintenance of policies and procedures for the Food and Beverage Department.
- Assists with the design and maintenance of Food and Beverage outlets.
- Assists with maintaining food presentation in accordance with food quality and safety standards.
- Must maintain a strict level of confidentiality regarding company information.
- Must obtain and maintain most current information regarding applicable Tribal, State, Federal, and Gaming policies, procedures, rules, and regulations.
- Perform other duties as assigned.
Minimum Requirements
- Preference is given to qualified Santa Ana Tribal Members.
- Four-year college degree in hospitality or related field required. May substitute experience on a year for year basis.
- Four years experience in a Food and Beverage Management capacity in a high-volume multiple outlet operation.
- Demonstrated experience managing all phases of food and beverage operations. Knowledge of service standards; experience in a large facility with multiple outlets, high volume production operation such as a casino, convention center or hotel.
- Experience in developing, implementing and evaluating programs, promotions and budgets.
- Thorough knowledge of the laws and regulations governing Food and Beverage preparation and service.
- Serv Safe and New Mexico liquor servers license (must obtain within 90 days of employment).
- Must be able to work any scheduled hours and shifts, including nights, weekends and holidays.
- Excellent written and verbal communication skills including the ability to successfully communicate with multiple levels of management.
- All employees are required to proficiently use a smartphone for company applications, email, and text
- Must be able to obtain and maintain a Pueblo of Santa Ana Gaming and Regulatory Commission primary gaming license.

Essential Physical Functions:
- While performing the duties of the position, the employee is frequently required to stand, walk, turn, bend, use hands and fingers to handle and feel, reach with hands and arms, talk and hear.
- Must be able to lift up to 50lbs
- Must be able to work at a fast pace and in stressful situations.
- Must be able to maneuver around the office and the facility as needed to collect all necessary materials and documents.
- Must be able to walk and stand for long periods of time.
- Physical ability to safely perform the essential job functions of the position.
