Food & Nutrition Specialist
Department: Prevention Intervention and Behavioral Health

Salary: $15.95 Hourly

Any combination of education and experience in the area of nutrition/culinary arts to equal 6 years. Responsible for services related to menu development and meal production for the Amistad Crisis Shelter program. Must be able to read, write, understand & speak English.

Job Description:

FOOD AND NUTRITION SPECIALIST: Under the supervision of the Program Director the Food and Nutrition Specialist will provide all services related to menu and meal production for the Amistad Crisis Shelter program.

MINIMUM QUALIFICATIONS: Associates degree in culinary arts/nutrition and 2 years experience in either accounting for, or administering child nutrition program; or any combination of education and experience equal to four years.

Must have strong computer skills.

Must be able to operate all modern office machines.

Ability to deal effectively with the public.

Must e able to follow and carry out written instructions quickly and accurately.

JOB CHARACTERISTICS/PHYSICAL DEMANDS:

This is a professional position, which requires organizational and communication skills, as well a judgment, tact and diplomacy in contacts with employees, community residents, parents, vendors and government agencies. Strict adherence is required to all regulations concerning confidentiality.

Good general health and ability to lift and carry 55 lbs are essential. Must be able to stand, walk, bend and lift moderate to heavy loads. Fingerprint process and under the skin TB Skin Test are required. An initial physical exam is required and then periodically thereafter.

Frequent travel is required by employee and proof of satisfactory car insurance is required.

DUTIES & RESPONSIBILITIES (Not Inclusive):

  • Development and implement a Nutrition Work Plan and provides technical assistance to program staff to meet the nutritional standards of the program.

  • Assist with and be knowledgeable about the Student Food Nutrition Application process.

  • Assist in the collection and compilation of information required for reimbursement. Prepare and file monthly reimbursement claim, forwarding to State entity in a timely manner.

  • Review and analyze Child Nutrition paperwork ensuring compliance with industry standards and Federal, State and Local Regulations.

  • Monitor compliance with Student Nutrition and health regulations regarding food preparation and serving.

  • Observe and evaluate Child Nutrition work procedures to ensure quality standards and service.

  • Provide technical assistance staff members engaged in preparing and serving food and other related duties.

  • Recommend measures to improve work procedures and worker performance to increase quality of Child Nutrition services.

  • Assist with menu planning and planning the utilization of food; based on enrollment figures, nutritional value, palatability, and costs.

  • Monitor food preparation and methods, quantities prepared, size of portions, presentation and palatability of food to ensure food is prepared and presented in an acceptable manner.

  • Investigate and resolve complaints regarding food quality and service.

  • Record production records properly to justify monthly reimbursement, three times daily.

  • Ensure that each meal recorded on menu records meet the daily requirements for the food program. Menus and recipes must meet all food serving requirements in correct amounts for ages 12-17 on each menu records.

  • Make sure to convert ounce to equivalents based on grams for correct recording and serving sizes.

  • Sanitation logs daily.

  • Temperature logs daily.

  • Train staff to follow recipes and monthly menus, and serve the required amounts.

  • Change all recipes to standardized recipes that meet the Dietary Guidelines for Americans.

  • Daily participation record edit checks.

  • Signage that shows what is being served at each meal.

  • Daily meal counts for lunch breakfast and snack.

  • Update the Wellness policy to correspond with Amistad views and needs.

  • Create a HACCP Policy that is updated when staff changes to provide the training each staff gets yearly.

  • Record online the yearly training required for all staff that provides meals to clients through Professional Standards Training Tracker Tool.

  • Provide the daily educational and enrichment activities that each client receives, when not attending school, as Amistad is then required to have school/education from 9am to 3pm.

  • Show and prove educational activities each client receives daily while residing at Amistad and not attending school.

  • Ensure contribution information for each menu item, (CN labels, USDA Food facts sheets).

  • Create a menu for any client that has allergies to food in any food group.

  • Obtain a Doctors note for each client that has a food allergy for client files.

  • Afterschool Snack Program Monitoring forms.

  • Verification collection reports.

  • Assist in the requisition and purchase of food, supplies and equipment.
